MYME'S EGGPLANT CASSEROLE 
1 lg. eggplant
3 slices bread
1/2 c. ham, cooked
1 c. cooked shrimp
Bread crumbs (plain or Italian)
1 tbsp. onion, chopped fine
1 tbsp. bell pepper, chopped fine
1/4 tsp. minced garlic
1 tbsp. celery, chopped fine
1/4 tsp. parsley
Salt and pepper to taste
1 egg

Boil eggplant. When done, drain eggplant and mash. Saute onions, bell pepper, garlic, celery, and parsley in a small amount of butter. Toast bread. In a bowl, mix eggplant and seasonings. Wet toasted bread; mash and add to mixture. Add egg and mix well. Add ham and shrimp. Salt and pepper to taste. Pour into greased casserole dish. Top with bread crumbs. Bake at 350 degrees for approximately 30 minutes or until firm.
