FRIED CHEESE CANAPES 
1 lg. loaf thick sliced white bread, crust removed
8 oz. ripe blue brie cheese
Salad oil for shallow frying

1. Roll out the bread with a rolling pin to flatten.

2. Spread a thin layer of blue brie onto each slice, then roll up tightly like a jelly roll.

3. Cut each roll into 3 pieces and shallow fry in batches over a high heat for 1 minute. Remove with a slotted spoon and drain on paper towel.

4. Serve warm or cold.
