SWEET POTATO PUDDING 
1/4 c. butter
3/4 c. sugar
2 eggs
1/2 tsp. pumpkin pie spice
1/4 tsp. salt
1 1/2 c. milk
2 1/2 c. grated, raw sweet potatoes

Cream butter and sugar. Mix in eggs, pumpkin pie spice, salt and milk. Fold in grated sweet potatoes. Pour into a buttered, shallow 2 quart baking dish and bake in 400 degree oven 1 hour. You will want to take the pudding right from the oven to table and serve with pork roast, baked ham or chicken. Serves 4-6.
