RICE AND BROCCOLI CHEESE BAKE 
1 box UNCLE BEN'S® long grain and wild rice (serves 6)
1 (10 oz.) pkg. frozen cut broccoli
2 tbsp. butter
1/4 c. finely chopped onion
1 clove garlic, minced
1/2 c. grated Monterey Jack cheese
4 eggs
1/2 c. milk
1/4 tsp. pepper
1 tsp. salt
1/4 tsp. thyme
1/2 c. grated Cheddar cheese

Cook rice as directed on package. In meantime, cook broccoli as directed on package. In separate pan melt butter. Saute onion and garlic until tender. Combine rice, onion mixture and broccoli. Add Monterey Jack cheese and mix well. In separate bowl, combine eggs, milk, salt, pepper and thyme, mixing well. Stir into rice mixture. Turn into buttered casserole dish. Sprinkle Cheddar cheese on top and bake 350 degrees 20-25 minutes.

Can be prepared and refrigerated ahead of time, but leave baking until just before serving.
