CHEESECAKE TARTS 
Serves 6.

6 single-serve pre-packaged graham crackers
6 oz. cream cheese, softened
1/4 c. sugar
2 tsp. lemon juice
1/4 tsp. vanilla
1 egg
2 tbsp. heavy cream
Strawberries, sliced and blueberries or other sliced fruits, fore garnish

Preheat oven to 325 degrees. Beat cream cheese until fluffy. Add rest of ingredients, beating well. Place individual tart crusts on baking sheet. Pour in filling. Bake 15 to 20 minutes until filling is set. Let cool. Chill in refrigerator two hours. Top with summer fruit. Serve.
