BROCCOLI - RICE CASSEROLE 
1 stick butter
2 pkgs. frozen chopped broccoli
3 or 4 stalks chopped celery
1 lg. green pepper, chopped
1 c. chopped onion
1 can sliced water chestnuts
1 lg. Cheez Whiz
1 can cream of mushroom soup
Salt and pepper
1 1/2 c. rice

Saute celery, bell pepper, and onion in butter. Add chopped broccoli. While broccoli simmers covered, cook rice separately in water about 2/3 the required cooking time.

Combine rice, broccoli mix, Cheez Whiz, mushroom soup, water chestnuts, salt, and pepper. Makes 1 large 9x13 or 2 medium casseroles. Bake at 350 degrees for 30 minutes. You can also grate additional cheese on top before baking, if desired.
