TATER DIPPED CHICKEN 
2 1/2 - 3 lb. chicken pieces
1 slightly beaten egg
2 tbsp. water
1 c. dry potato flakes (instant)
1/4 c. butter
1 tsp. salt
1/4 tsp. pepper

Melt butter in shallow baking pan. Mix egg, water, salt and pepper. Dip chicken pieces in egg mixture, then roll in dry potato flakes. Place chicken pieces, skin side down in pan of melted butter. Bake at 400 degrees for 30 minutes; turn, bake 30 minutes more. Yield: 4 servings.
