TATER DIPPED CHICKEN 
2 1/2 to 3 lbs. chicken, cut in pieces
1 egg, slightly beaten
2 tbsp. water
1 c. instant potato flakes
1/4 c. butter
1/2 tsp. salt
Dash pepper

Dip chicken in mixture of egg and water. Roll in potato flakes. Melt butter in shallow baking pan. Place chicken skin side up in pan. Season with salt and pepper. Bake uncovered at 400 degrees for 30 minutes. Turn and bake 30 minutes longer.
