NO SHORTENING PINEAPPLE CAKE 
2 c. flour
2 c. sugar
2 eggs
2 tsp. baking soda
1 c. chopped walnuts
1 tsp. vanilla
1 (20 oz.) can crushed pineapple with juice

Preheat oven to 350 degrees. Beat eggs and add sugar, vanilla, and pineapple, undrained. Add flour, baking soda, and walnuts. Mix well. Pour into ungreased 9 x 13 inch baking dish. Bake 45-50 minutes. Cool completely before topping with confectioners sugar or cream cheese frosting.
