PEACH DEEP DISH PIE | |
2 1/2 lbs. peaches, sliced Juice of 1 lemon 3/4 c. granulated sugar 1/2 tsp. ground cinnamon 2 pinches of ground cloves 2 tbsp. flour 1 pinch of salt Slice peaches. Toss slices in juice of 1 lemon, plus sugar, cinnamon, cloves, flour and salt. Turn peaches in a deep 9 inch baking dish. Top with a layer of flaky pastry. Seal edges of pastry and cut a few steam vents on top. Refrigerate pie for 10 minutes, then brush top with a little milk and sprinkle on a little granulated sugar. Bake at 425 degrees for 10 minutes. Reduce to 375 degrees and continue baking about 35 minutes longer until the top is brown and the peaches are tender. Serve warm with scoops of ice cream. And my Mom made the BEST!!! |
