OKRA FRITTERS 
10 oz. pkg. frozen cut okra (or 1 1/2 c. cooked fresh okra, drained)
1 c. flour
2 tsp. baking powder
1 tsp. salt
1/8 tsp. pepper
2 eggs, beaten
1 tsp. minced onion
1 tbsp. melted butter
1/2 c. evaporated milk
1/2 c. salad oil

Cook frozen okra according to package directions; drain and set aside. Combine dry ingredients; stir in eggs, onion, butter and milk. Fold okra into batter. drop batter by tablespoonfuls into oil heated to 375 degrees. Cook 2 minutes on each side or until lightly browned. Drain on paper towels. Yield: 1 dozen.
