JACK'S OMELET 
1 lb. bacon
2 c. diced, cooked potatoes
1 c. diced celery tops
2 diced bell peppers
1/2 c. diced onion
8 beaten eggs
Cheese (your choice) to cover top of eggs

Fry bacon until crisp in 10 inch skillet. Drain off grease. Add potatoes, celery, peppers, and onions. Cook slowly on medium low until tender, stirring once or twice. Add eggs; stir and cook until eggs are set. Lay cheese on top and cook, covered, until cheese melts.
