MEXICAN OVEN OMELET 
1 c. milk
1/2 c. Bisquick baking mix
3 eggs
1/2 tsp. onion salt
2 (4 oz.) cans whole green chilies
1/2 (8 oz.) jar Del Monte salsa roja
1 (17 oz.) can Del Monte burrito filling mix
1 c. shredded Cheddar cheese

Lightly grease an 8 x 8 x 2-inch baking dish. Combine milk and baking mix. Beat in eggs and onion salt. Drain and slice chilies lengthwise; place in dish. Top with salsa roja, burrito filling mix and cheese. Pour egg mixture evenly on top.

Bake at 350°F for 30 to 40 minutes. Garnish with radishes, olives or sour cream, if desired.

Serves 4 to 6.
