BROCCOLI CORN BREAD 
1/2 c. butter, melted
1/3 c. chopped onion
1 tsp. salt
3/4 c. cottage cheese
1 pkg. (10 oz.) frozen chopped broccoli, thawed and drained
4 eggs, slightly beaten
1 pkg. (8 1/2 oz.) quick corn muffin mix

In mixing bowl combine melted butter, onion, salt, cheese, broccoli and beaten eggs, blend. Stir in muffin mix. Pour into greased 9x13x2 baking pan. Bake at 400 for 20-25 minutes. Cut into serving size squares. Yield: 12 servings.

This goes great with potato soup.
