MOCK APPLE BUTTER 
4 c. zucchini, pureed
4 tbsp. vinegar
1 tsp. lemon juice
2 drops red food coloring
2 c. sugar
1 tsp. cinnamon
Dash allspice (if desired)

Peel and seed zucchini, and chop coarsely. Put in blender with vinegar and blend until smooth. Pour into saucepan with remaining ingredients and cook, stirring occasionally, until mixture thickens. Cool and keep refrigerated.
