ZUCCHINI CASSEROLE 
1 c. Bisquick
3 c. zucchini, thinly sliced
1/2 c. chopped onion
1/4 c. grated Parmesan cheese
2 tbsp. parsley, chopped
1/2 tsp. oregano
1 clove garlic (fine, or through garlic press)
5 eggs
1/2 c. oil
Salt and pepper to taste

Grease 2 quart casserole, mix everything together lightly and dump into dish. Bake 40 minutes at 350 degrees. NOTE: DO NOT PUT LID ON CASSEROLE as this will make crust soggy.

This recipe is great. I added about 4 cloves of garlic and sprinkled panko plain bread crumbs on top and then sprayed the top with a little pam or whatever just so the crumbs brown. Oh and I assembled the dish the day before, brought it to room temp and it took about 45-50 minutes.
