HAM-POTATO CHOWDER | |
4 medium potatoes 2 tbsp. butter 1/4 c. chopped onion 2 c. water 1 tsp. salt 1/8 tsp. pepper 1/4 tsp. paprika 3 tbsp. flour 2 c. milk 1 small can corn 2 c. diced ham Peel and dice potatoes. In large saucepan, melt butter. Add onion and cook until tender. Add potatoes, water, and seasonings. Cover and simmer until potatoes are tender. Make a paste of the flour and 1/2 c. water; add to potato mixture. Add milk and cook until slightly thickened. Stir in undrained corn and ham. Heat through. (This soup tastes even better the day after you make it!) |
