"GARLIC" ROASTED POTATOES 
3 lb. sm. red new potatoes
2 tsp. oregano
3/4 c. olive oil
10 garlic cloves
2 bay leaves, crumbled
Salt & freshly ground pepper

Preheat oven to 450 degrees. Combine potatoes, garlic and herbs in large shallow roasting pan. Pour olive oil over and toss to coat. Season generously with salt and pepper. Roast until potatoes are tender and browned, stirring occasionally, about 45 minutes. Transfer potatoes to serving dish. Chop roasted garlic and toss with potatoes. Pour oil from pan over all. Toss gently and serve.

Note: Be sure to use a roasting pan large enough to hold the potatoes in a single layer so they do not steam. Servings: 8.
