GARLIC ROASTED POTATOES 
3 lbs. med. size red potatoes, cut in 1/2 inch slices
1/4 c. olive oil
1 head garlic, cloves lightly crushed and peeled
Fresh cracked black pepper to taste
1 tbsp. chopped fresh parsley
1/2 tsp. salt

Preheat oven to 375 degrees. In large, shallow glass baking dish. Toss together the potatoes with oil, garlic, cloves, and pepper. Bake, turning several times, 1 hour or until potatoes are golden brown and tender when pierced with a fork. Place on service dish, scraping up any browned bits in baking pan. Add parsley, salt, and additional pepper (if desired). Toss lightly to combine. Serve warm or at room temperature.
