RITA'S TANGY CAULIFLOWER 
1 med. cauliflower
1/2 c. plain yogurt
1/2 c. sharp cheese, grated
1/2 c. mayonnaise
2 tbsp. Dijon mustard
Dried chives (optional)

Cut flowerets off cauliflower. Wash and arrange in microwave dish (covered); add a little water. Cook until tender. Mix mayonnaise, mustard, yogurt and chives. Spread on top of cauliflower. Top with cheese and cover. Microwave until cheese is melted.

Since microwave ovens vary in power, you may need to adjust your cooking time.
