BANANA MUFFINS 
1 egg
1/3 c. milk
1/2 c. oil
2 c. flour (all purpose or wheat)
1/3 c. sugar
3 tsp. baking powder
1/2 tsp. salt
1 c. mashed bananas
1/3 c. chopped nuts

Heat oven to 400 degrees and line or grease bottom of 12 muffin cups. Beat egg, stir in milk and oil. Stir in remaining ingredients until flour is moistened. Fill cups 3/4 full. Bake until golden brown, 20 minutes.
