BANANA - RAISIN MUFFINS | |
1 1/4 c. all-purpose flour 1/2 c. whole wheat flour 1 tsp. baking soda 1/4 tsp. salt 1/4 c. vegetable oil 1/4 c. egg substitute 1/3 c. honey 1 c. mashed ripe bananas 1/3 c. raisins 1 tsp. vanilla extract Vegetable cooking spray Combine flours, baking soda and salt in a large bowl; make a well in the center of the mixture. Combine oil and next 5 ingredients, stirring just until moistened. Coat paper muffin pan liners with cooking spray; spoon batter into liners, filling 2/3 full. Bake at 350 degrees for 15 minutes. Remove from pans immediately. Yield: 18 muffins (116 calories per muffin). |
