BANANA BRAN MUFFINS 
1 c. 100% wheat bran cereal
1 c. mashed bananas
2/3 c. milk
1/4 c. firmly packed brown sugar
1/4 c. vegetable oil
1 egg, beaten
1 1/2 c. all-purpose flour
1 tbsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. salt

Combine first 3 ingredients in a large bowl, stirring well; let stand 5 minutes. Add brown sugar, oil and egg; mix well. Combine next 4 ingredients; stir into bran mixture just until combined. Spoon into greased muffin pans, filling 1/2 full. Bake at 375 degrees for 20-25 minutes. Yield: 1 1/2 dozen.
