BANANA-BRAN MUFFINS 
1 1/4 cups whole wheat flour
3 tsp. baking powder
1/2 tsp. salt
1/4 cup brown sugar
2 1/2 cups bran flakes cereal
3/4 cup milk
1 egg
1/3 cup vegetable oil
3 to 4 mashed ripe bananas
3/4 cup chopped walnuts or pecans

Stir together flour, baking powder, salt and sugar. Set aside.

Measure bran flakes, milk and mashed bananas into mixing bowl. Stir to combine. Let stand 1 to 2 minutes until cereal is softened. Add egg and oil. Beat well. Add dry ingredients to cereal mixture, stirring only until combined. Pour batter evenly into 12 greased 2 1/2-inch (or 6 jumbo size) muffin pan cups.

Bake in oven at 400°F about 25 minutes or until muffins are golden brown.
