RITZ CRACKER PIE 
24 Ritz crackers, crushed
3 egg whites, slightly beaten
1 c. sugar
1 tsp. baking powder
1 tsp. vanilla
1 c. chopped pecans

Combine crumbs and egg whites. Mix remaining ingredients; add to crumb mixture. Pour into lightly greased pie pan. Bake at 350 degrees for 20-25 minutes. Chill. Serve with whipped cream.

This pie is awesome just to say, however, we added apricot preserves on top then whip cream... wow next try will be apple preserves, strawberry, or may do a cranberry try for this... sounds good huh?

My mom always made this pie growing up. She would layer bananas then coolwhip x2 ending with the cool whip and sprinkle with pecans. It caramelizes nicely in the refrigerator and is always a hit at pot luck dinners.
