PINTO BEAN PIE 
1 stick butter, melted
1 1/2 c. sugar
2 eggs
1/2 c. pinto beans (cooked, drained & mashed)
1/2 c. coconut
1 tsp. vanilla
1 uncooked pie shell

Using a spoon (not an electric mixer) mix together sugar and beans. Stir in melted butter, then add eggs, stir well. Add coconut and vanilla. Pour into pie shell. Bake 1 hour in 350 degree oven. Enjoy.
