BANANA NUT MUFFINS | |
2 1/4 c. oat bran cereal 1 tbsp. baking powder 1/4 c. brown sugar 1/4 c. chopped walnuts or pecans 1 1/4 c. skim milk 2 very ripe bananas 2 egg whites 2 tbsp. vegetable oil Preheat oven to 425 degrees. Mix the dry ingredients in large bowl. Mix the milk, bananas, egg whites, and oil in a bowl or blender. Add to the dry ingredients and mix. Line the muffin pan with paper baking cups and fill them with batter. Bake for 17 minutes. Makes 12 muffins. |
