SPINACH WITH ANCHOVIES 
2 pkg. chopped frozen spinach, thawed and drained
1/2 c. olive oil
1 1/2 cloves garlic, minced
1 (2 oz.) tin anchovy fillets, washed, drained and minced or 1 1/2 tbsp. anchovy paste
1 1/2 c. cottage cheese, sm. curd
2 eggs
1 tsp. mustard
Salt and pepper, to taste (anchovies are salty)
3/4 c. shredded Mozzarella cheese
1/3 c. bread crumbs
Dots of butter

Heat olive oil and garlic briefly; add spinach and saute for 2 minutes. Add anchovies, cottage cheese, eggs, mustard, salt, and pepper. Top with Mozzarella cheese and bread crumbs, dotted with butter. Bake in 350 degrees for 25 minutes. Freezes well. Serves 6-8.
