NAVAJO FRY BREAD 
1 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/2 c. lukewarm water
8-10 tbsp. solid shortening
Honey or jam

Sift the flour, baking powder, and salt together into a bowl. Sift in the water, then mix with four fingers and knead lightly by dipping in with the heel of your hand, making a soft dough. Dust with flour if the dough is sticky. Roll out dough 1/4 inch thick on a lightly floured surface. Cut into squares, just until 2 inches. Melt the shortening in a sturdy saucepan. When hot and almost smoking, quickly fry 2-3 squares of dough at a time; they will puff up. Brown on both sides. Drain on paper towel. Serve hot with honey or jam on the side. Makes 24.
