GREEK VEGETABLES 
1 zucchini
1 small eggplant
1 medium to large onion
1/2 c. olive oil
3 tbsp. butter
1 lb. string beans, chopped
1 lb. fresh peas or limas
1 lb. tomatoes, chopped
fresh dill to taste
fresh mint to taste
1 tsp. sugar
salt and pepper to taste
garlic powder to taste

Chop zucchini, eggplant and onion and sauté in oil and butter. Add remaining ingredients. Cover and cook on low until tender.
