EGGPLANT AND DIRTY RICE
CASSEROLE
 
1 lb. ground beef
1 lg. onion, chopped
1/2 c. Parmesan cheese
1 lg. pepper, chopped
3 garlic cloves
2 med. eggplants
2 c. cooked rice
1 c. celery, chopped

Saute meat, onions, garlic and bell pepper until brown. Add eggplant (boiled until tender) juice and all. Cook about 1 hour in a skillet. Add the rice and sprinkle with the Parmesan cheese. Serves 4-6.
