IRISH BREAD 
2 1/2 c. flour
2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1/4 c. butter
1/2 c. sugar
1 egg, beaten
1 1/2 c. buttermilk (room temperature)
1 c. raisins or more
1/2 c. currents (optional)
1 tbsp. caraway seeds (optional)

Sift together flour, baking powder, salt, soda; set aside. Cream the butter and sugar, add beaten egg, buttermilk, and blend well. Add liquid mixture to dry ingredients, mix by hand only until dry ingredients are well moistened, fold in raisins, currents, caraway seeds.

Pour into greased 1 1/2 quart glass casserole. Brush top with melted butter, sprinkle with sugar.

Bake at 375 degrees (preheated) oven for 30 minutes, then reduce to 325 degrees for about 30 minutes longer.

Test in the middle of loaf before removing bread from oven.
