BEET SALAD 
1 bunch young beets, tops removed and peeled
2 c. red cabbage, shredded
1 c. carrots, shredded
1/2 c. lemon juice
1/4 c. olive oil
1/2 tsp. salt (optional)
1/4 c. sesame seeds

Grate beets real fine into a salad bowl. Add cabbage and carrots. Beat together the lemon juice, honey, oil and salt and pour over beet mixture. Toss and chill. Sprinkle seeds over top.

Makes 8 to 10 servings.
