EASY PASTA PRIMAVERA | |
1/2 c. olive oil 1/2 lb. broccoli, chopped 1 lb. zucchini, chopped 1/2 lb. fresh green beans, chopped 6 shallots, chopped 1 garlic clove, minced 1/4 c. minced fresh parsley 2 tbsp. minced fresh basil 1 lb. linguine 1/3 c. grated Parmesan cheese In a large skillet, heat oil and add broccoli, zucchini, green beans, shallot and garlic. Steam 5-6 minutes. Add parsley and basil; recover and steam until vegetables are crisp. Season with salt and pepper. Put pasta in large bowl and add vegetable mix and toss. Dust with Parmesan cheese. |
