EASY BUT ELEGANT PASTA | |
1/4 c. olive oil 3 cloves garlic, sliced in half 28 oz. can Italian style tomatoes 1 tbsp. Italian seasoning or oregano 1/2 c. white wine 1/2 tsp. salt 1/8 tsp. pepper 1/2 lb. fusilli noodles 1 c. shredded mozzarella cheese Grated Parmesan cheese Heat the oil in a medium - size frying pan over medium heat. Add garlic and cook, making sure to stir regularly. When garlic turns a light golden brown remove from oil and discard. Add the tomatoes and their liquid to the pan. Break up tomatoes with a spoon. Add seasoning, salt, pepper and wine to pan; cook uncovered for 15 minutes stirring occasionally until sauce has thickened some. While cooking sauce cook noodles in salted water. When noodles are done, drain well and place back in pot. Mix hot fusilli noodles with mozzarella cheese. Serve on individual plates and pour sauce over it. Parmesan may be added at the table Makes 4 to 6 servings. |
