3 to 8 lb. eye round of beef
olive or vegetable oil
salt and pepper
garlic powder
onion powder

Preheat CONVECTION oven to 325°F.

Rub beef with a little oil and sprinkle with seasonings and put in roasting pan with a meat thermometer.

Remove beef from oven when thermometer registers 140°F and let sit covered lightly with foil until thermometer reaches 155°F for medium.
