CHOCOLATE MANDARIN ORANGE CHEESE
CAKE
 
CRUST:

1 pkg. graham crackers, crushed
6 tbsp. butter, melted
4 tbsp. sugar

CHEESE CAKE:

3 (8 oz.) pkgs. cream cheese, softened
3 eggs
1 c. sugar
6 oz. chocolate chips
3 (1 oz.) sqs. semi-sweet chocolate
2 tbsp. butter
2 tsp. orange extract
3 tbsp. sugar
1 can mandarin oranges, drained
Peel of one orange, grated fine

Crust: Crush graham crackers fine; mix in 6 tablespoons melted butter and 4 tablespoons sugar. Mix well. Press into bottom of spring-form pan.

Cheese Cake: Cream cream cheese and 1 cup sugar. Add 1 egg at a time. Beat until very smooth. Melt chocolate chips and chocolate squares and 2 tablespoons butter; stir over low heat. Add to cream cheese mixture. In food processor, add oranges, orange rind, extract, and 3 tablespoons sugar. Mix until totally liquid. Spoon liquid into chocolate cheese mixture. Mix gently. Pour onto crust. Bake at 450 degrees for 10 minutes then at 250 degrees for approximately 50 minutes. Turn off oven. Leave door ajar, leaving cheese cake in until edges begin to pull away from sides of pan. Cool thoroughly.
