PIZZA SALAD 
Preparation time: 15 to 20 minutes. Serves: 4 to 6.

1 sm. head iceberg lettuce, finely chopped
1 sm. head Romaine lettuce, finely chopped
4 oz. whole pepperoni
4 oz. shredded Mozzarella cheese
1/3 c. chopped red onion
1/2 c. each chopped tomatoes & sliced olives

PARMESAN SALAD DRESSING:

1/2 c. olive oil or salad oil
4 tbsp. red wine vinegar
1 tsp. each salt & pepper
1/2 c. grated Parmesan cheese
1/2 tsp. each dried oregano & basil leaves

1. Combine the two kinds of lettuce.

2. Cut pepperoni into thin slices. Place lettuce on a platter. Garnish with pepperoni, cheese, onion, tomato and olives, making it look like a pizza.

3. Combine the dressing ingredients. Shake or blend together.

4. Pour dressing over salad. Serve. Or place the lettuce in a bowl and serve toppings and dressing alongside. Toss at the table with the dressing.

Good served with: Crusty Italian bread and red wine, if desired. For dessert, serve a chocolate torte and coffee.

TIPS: Some other possible salad additions might be: canned garbanzo beans, marinated artichoke hearts, canned button mushrooms or whatever you like on your "pizza salad". Provide small bowls of various toppings.

HEALTH NOTE: To reduce fat and sodium, substitute thinly sliced boiled ham for pepperoni and halve the amount of olives.
