Adopted from "The Moosewood Cookbook" by Mollie Katzen. 1/3 c. oil 3 tbsp. sesame oil 1/2 c. orange juice 1 clove garlic, crushed 2 tbsp. soy sauce 2 tbsp. brown sugar 2 tbsp. cider vinegar 1 sm. onion, chopped 1/2 c. raisins 1/2 c. chopped peanuts 2 tbsp. sesame seeds 1 c. red or green bell peppers, chopped
Cook rice. While rice is cooking, combine the oils, the orange juice, garlic, soy sauce, brown sugar and cider vinegar. Combine the cooked rice and the dressing; mix well. Add the onion, raisins, peanuts, sesame seeds and bell peppers. Mix. Chill the salad about an hour before serving.
