3 c. apples, cubed Red Delicious
3 c. flour, plain Red Ban or cake flour, NOT all-purpose
3 eggs
1 c. Wesson oil
2 tsp. vanilla
2 c. sugar (optional: 1 1/2 c. white, 1/2 c. brown)
1 c. chopped pecans
1 tsp. salt
1 tsp. baking soda
1/2 tsp. nutmeg
1/2 tsp. cloves
1 1/2 tsp. cinnamon

Beat eggs. Add oil and sugar, sift flour and spices, salt, and soda and add to first mixture. Stir in vanilla. Stir in apples and nuts. Spoon mixture into greased and floured tube pan. Bake at 350 degrees for 1 hour and 10 minutes.
