“EASY MEXICAN RICE” IS IN:

EASY MEXICAN RICE 
1 tbsp. vegetable oil
1 cup long grain rice
2 1/2 cups cold water
2 tsp. salt
2 tsp. garlic salt or 1 tsp. garlic powder
3/4 cup tomato sauce

In a skillet heat oil over medium heat. Add rice and cook until lightly browned. Add water and remaining ingredients, bring to a boil.

Cover and simmer until rice is tender.

I added some whole cumin and some chili powder. I stirred in some corn/peas/carrots (frozen) that a cooked for a minute in the microwave. Delicious and so very easy!

This is how I was taught to make rice by my Mom, its great with a big pot of Beans and some flour tortillas that's all and my family is happy add some salsa it's all good.

I vary the recipe a little and use salsa instead of tomato sauce and add leftover things and it turns out unbelievable! Great stuff!!!

We used this recipe for a taco fund raiser at church today. The rice was a big hit and we only had a couple of cups left at the end! And we saw only empty plates going in the trash!! We did reduce the water back at the first batch was made and stirred a little extra tomato sauce in as needed to keep the rice from getting sticky.

We also added a tsp of Cumin to each serving and that was a good choice.

Thank you for sharing this recipe - it is definitely a "keeper".

This is a great recipe, my family has been making this for years. We also use fideo noodles instead of rice and use a small can of tomato paste with 2 chicken bouillon cubes. Add some cumin and onion powder also.

The reviews are correct. this is a very simple and good recipe. Let the rice simmer about 20 minutes. Mine came out a too salty. I will use garlic powder next time (vs. garlic salt) and 1 tsp. salt. I believe stewed canned tomatoes may be better that tomato sauce... whats great about this recipe is it gives you the basics for great simple rice and then you can customize it with whatever you like!

I love to make rice and beans and this was definitely something i will make again. I make my own rice as well and its very simple.

I cook for a large family.
WHAT YOU'LL NEED:
1 lb. boneless,skinless chicken breast.(cut into 1 inch pieces)
5 cups. goya rice.
3 tbsp. adobo.
3 tbsp. soul seasoning or seasoned salt.
1/4 tsp. Dave's insanity sauce.(Be careful extremely hot!).
1/2 cup. Goya tomato sauce.
1/2 cup. Goya sofrito tomato cooking base.
One can of goya pigeon peas.
One can of goya pink bean.
1/3 cup of vegetable. oil.
5 cups water.

High heat.
Put the 1/3 cup vegetable oil on the bottom of a large pot,
Add 5 cups water, Dave's sauce, pigeon peas (drained), pink beans, tomato sauce, sofrito, soul seasoning, adobo, and chicken. (stir)

Let it boil for 10 minutes.

Add rice and turn down to low heat.(cover with lid)

Stir every 15 minutes.

Let cook for 45 minutes.
