COCONUT MACAROON PIE 
3 eggs, separated
1 c. sugar
1/4 tsp. salt
1 tsp. vanilla
1 1/2 c. flaked coconut
1/4 c. milk
2 tbsp. butter, melted
1 tsp. lemon juice
1/4 tsp. almond extract
1 unbaked pie shell

Beat egg yolks in large bowl until thick. Add sugar, beat well. Stir in milk and next 5 ingredients. Beat egg whites until soft peaks form. Fold in whites and coconut into yolks. Pour in shell. Bake at 375 degrees for 35 minutes or until knife comes out clean.
