SWEET POTATO PIE 
2 slightly beaten eggs
1 1/2 c. cooked, mashed sweet potatoes
1 c. sugar
1/2 tsp. salt
1 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. cloves
1/4 tsp. nutmeg
1 2/3 c. Carnation evaporated milk
9 inch unbaked pie shell

Combine eggs, sweet potatoes, sugar, salt, and spices. Gradually add evaporated milk. Mix well. Pour into unbaked pie shell. Bake at 425 degrees for 15 minutes. Reduce to 350 degrees and continue baking about 40 minutes or until knife inserted near center of pie comes out clean. Cool before serving.

My 2nd attempt at a sweet potato pie and I'm so pleased with this one. Came together easily, looks beautiful, and is delicious. One can of evaporated milk is not enough, so made up the difference with whole milk. Very, very happy with this recipe. No need for me to look at any other recipes for sweet potato pie.
