CARROT CAKE 
2 c. self-rising flour
2 c. sugar
1 1/2 c. Crisco oil
1 tsp. vanilla
3 c. grated carrots
3 tsp. cinnamon
4 eggs
1 tsp. baking soda

FROSTING:

1 stick butter
1 (8 oz.) pkg. cream cheese
1 box confectioners sugar
1 c. chopped black walnuts
1 tsp. vanilla

Mix cake and bake at 350 degrees for 35-40 minutes. Allow cake to cool and frost.
