ALBONDIGAS SOUP 
MEATBALLS (ALBONDIGAS) :

1/2 c. bread or cracker crumbs
1/4 c. milk
1 egg
1/2 lb. each ground beef and ground pork
Salt and pepper
1/4 c. minced onion
2 cloves garlic, minced
1 tbsp. fresh mint, minced or 2 tsp. dried

Mix together and shape into small balls. Brown lightly on all sides.

SOUP:

1 tbsp. oil
1 sm. onion, chopped
1 clove garlic, minced
5 c. water or chicken broth
4 chicken bouillon cubes (if no broth)
1/2 (8 oz.) can tomato sauce
1 carrot, sliced
1 zucchini, sliced
2 tomatoes, chopped

Heat oil in large pan. Cook onion and garlic until soft. Stir in broth and tomato sauce. Simmer 10 minutes. Add meatballs and carrots. Simmer 20 minutes. Add zucchini and tomatoes. Simmer 10 minutes.

This soup was VERY good. I gave it four stars however, because it was rather greasy from the chorizo. I had to scoop the grease out. It had a very good flavor. I did modify it a bit and added carrot to the soup, lots of celery, a potato and an extra can of diced tomato. It was a big hit with my husband, we both loved it. Mini Doberman

Close to mothers as far as ingredients but no ground pork and she would sprinkle rice into the meat mixture.

I made some changes. Added cooked rice to the meatballs as well as cilantro. To the soup I added fresh roma tomatoes, fresh corn off the cob, cilantro, celery, lime zest, 1/2 teaspoon red wine vinegar, red chile flakes. It was outstanding!
