BLINTZES 
2 eggs
2 egg whites
1 c. flour
1 1/2 c. milk
2 tbsp. sugar
1/4 tsp. salt

Beat eggs; add other ingredients. Beat to make a smooth batter. Rub butter around a 7-inch skillet. Pour in just enough batter to cover the bottom of the skillet when it is tipped so the batter rolls around. Recipe will make approximately 15 thin blintzes.

Fill with 1 tablespoon filling, roll up and place in a buttered baking dish.

Bake until golden brown.

Filling:

3 (5 oz. ea.) pkgs. small packages Farmer's cheese
2 egg yolks
2 or 3 tablespoons sugar, to taste
pinch of cinnamon

Combine filling ingredients.
