BRAN MUFFINS 
2 1/2 c. All Bran cereal
1 c. raisins
1 c. boiling water
1/4 c. safflower oil
1/2 c. molasses
1/2 c. Eggbeaters, thawed
1/2 qt. buttermilk
2 1/2 c. unbleached wheat flour
2 1/2 tsp. baking soda
1/2 tsp. lite salt
1 tsp. cinnamon

Combine cereal and raisins and pour boiling water over them. Set aside to cool.

In a very large bowl, combine molasses and oil. Stir in Eggbeaters, then buttermilk. Mix flour, cinnamon, baking soda, and lite salt in another bowl, then add to batter. Add raisin-bran mixture.

Spoon batter into muffins that have been sprayed with Pam. Bake at 400 degrees for 25-30 minutes. Allow to cool. Makes 2 dozen.
