APRICOT BARS 
1 c. sugar
1 c. butter
2 egg yolks
2 c. sifted all-purpose flour
1 c. chopped nuts
1/2 tsp. salt
Apricot filling (below)

Preheat oven to 325 degrees. Grease 9-inch square baking pan; set aside. Cream sugar and butter with electric mixer in mixing bowl until light and fluffy. Add egg yolks; blend well. Add flour, nuts, and salt; blend well.

Spread 1/2 dough in prepared pan. Carefully spread apricot filling over dough. Carefully spread remaining dough over filling. Bake 45 minutes or until golden brown. Cool in pan before cutting into bars.

APRICOT FILLING:

1/2 c. finely chopped dried apricots
1/2 c. water
1/3 c. sugar
1/2 tsp. vanilla

Combine apricots and water in small saucepan. Cover and cook 20 minutes. Add sugar; cook, uncovered, until thick. Cool slightly. Stir in vanilla and cool completely.
