MICROWAVE RICE PUDDING 
1/2 c. instant rice
1 pkg. vanilla pudding, NOT instant
2 c. milk
Nutmeg (optional)

Empty pudding into 2-quart microwavable bowl. Gradually stir in 2 cups milk. Stir in 1/2 cup instant rice. Add 1/2 teaspoon nutmeg, if desired. Microwave at high 8 minutes, stirring every 2 minutes. Cool before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
