ZUCCHINI RELISH 
10 c. grated zucchini
4 c. onion chopped
4 c. green pepper
1/3 c. salt
1 tsp. turmeric
1 tsp. nutmeg
1 tsp. celery seed
2 1/2 c. vinegar
4 1/2 c. sugar

Combine zucchini, onion, green pepper and salt and let stand 3 hours in ice water. Drain zucchini and vegetable mixture. Add spices, sugar, vinegar. Boil 3 minutes and seal in pint jars. Makes 6 pints.
